Scrambled Eggs the Right Way

Ingredients

2 fresh eggs 🥚
A pinch of salt 🧂
A splash of milk 🥛
1 tablespoon butter 🧈

Method

Crack 2 fresh eggs into a bowl, checking for any bits of shell 🥚🥚
Add a pinch of salt and a splash of milk, then whisk well until the yolks and whites are all one color 🧂
Set your pan on low heat and melt about a tablespoon of butter, swirling it around to coat the whole bottom 🧈
Pour in the eggs and let them sit for just a moment before you start stirring 🍳
Stir slowly and gently with a spatula, pushing the eggs from the edges to the middle, until they're soft and just barely set — don't overcook them! 🍽️

Golden Buttered Toast

Ingredients

1 thick slice of good bread (sourdough or country white) 🍞
Soft butter 🧈
Honey or cinnamon sugar 🍯

Method

Pick a nice thick slice of good bread — sourdough or country white works well 🍞
Pop it in the toaster (or under a hot broiler) and toast until it's golden brown all over, watching closely so it doesn't burn ✨
While it's still warm and crisp, spread a generous smear of soft butter all the way to the edges so it melts right in 🧈
Drizzle a little honey over the top, or sprinkle cinnamon sugar if you like it sweet 🍯
Eat it right away while it's warm — toast waits for nobody! 💛

Grandma's Buttermilk Biscuits

Ingredients

2 cups flour 🥣
1 tablespoon baking powder
½ teaspoon salt 🧂
A pinch of sugar
½ cup very cold butter 🧈
¾ cup buttermilk 🥛

Method

Heat your oven to 450°F and whisk together 2 cups flour, 1 tablespoon baking powder, ½ teaspoon salt and a pinch of sugar 🥣
Cut in ½ cup of very cold butter using a fork or your fingertips until the mix looks like coarse crumbs — keeping that butter cold is the secret! 🧈
Pour in about ¾ cup buttermilk and fold it together gently, just until it comes into a shaggy dough — don't overmix 🥛
Pat the dough out about an inch thick on a floured counter, then cut rounds with a cup or biscuit cutter, pressing straight down 🫓
Set them close together on a pan and bake 12–15 minutes until they're tall and golden. Brush the tops with butter fresh out of the oven ✨

Sweet Skillet Cornbread

Ingredients

1 cup cornmeal 🌽
1 cup flour 🥣
¼ cup sugar
1 tablespoon baking powder
½ teaspoon salt 🧂
1 egg 🥚
1 cup milk or buttermilk 🥛
¼ cup melted butter 🧈

Method

Put your cast iron skillet in the oven and heat it all to 400°F — a hot skillet gives you that crispy edge 🍳
In a bowl, stir together 1 cup cornmeal, 1 cup flour, ¼ cup sugar, 1 tablespoon baking powder and ½ teaspoon salt 🥣
Mix in 1 egg, 1 cup milk (buttermilk is even better) and ¼ cup melted butter, stirring just until there's no dry flour left 🥚
Carefully take the hot skillet out, swirl in a little butter, then pour the batter in — it should sizzle nicely 🌽
Bake 20–25 minutes until golden around the edges and a toothpick comes out clean. Let it cool a while before slicing ✨

🍗 Lesson 5 Beginner

Recipe № 5 · Southern Kitchen

Crispy Fried Chicken

Ingredients

Chicken pieces 🍗
Buttermilk 🥛
Salt and hot sauce
Flour 🥣
Pepper, paprika and garlic powder
Oil for frying 🔥

Method

Soak your chicken pieces in buttermilk with a little salt and hot sauce, covering them well — an hour or overnight in the fridge is best 🥛
Whisk together flour with salt, pepper, paprika and garlic powder, then dredge each wet piece in it, pressing so it sticks all the way around 🥣
Heat about an inch of oil in a heavy pan to 350°F — be careful, hot oil is nothing to play with, keep your hands dry 🔥
Lay the chicken in gently, away from you, and fry 6–8 minutes per side until it's deep golden and cooked all the way through (165°F inside) 🍗
Lift it out with tongs onto a wire rack to rest and stay crispy — never a paper towel, that makes it soggy. Then enjoy! ✨

Creamy Garlic Parmesan Pasta

Ingredients

8 ounces spaghetti or fettuccine 🍝
3 tablespoons butter 🧈
3 garlic cloves, minced 🧄
1 cup cream

Pepper and fresh parsley 🌿

Bring a big pot of water to a rolling boil, salt it well, then drop in 8 ounces of spaghetti or fettuccine and cook until just tender 🍝
Scoop out a cup of the starchy pasta water before you drain — that's liquid gold for your sauce! 💧
In a pan on low heat, melt 3 tablespoons butter and gently cook 3 minced garlic cloves until fragrant, careful not to brown it 🧄
Pour in 1 cup of cream, let it warm through, then stir in ¾ cup grated parmesan a handful at a time until silky 🧀
Toss the drained pasta in the sauce, splashing in that pasta water until it coats every strand. Season with pepper and a little parsley 🌿

🥩 Lesson 9 Advanced

Recipe № 9 · Southern Kitchen

Perfect Pan-Seared Steak

Ingredients

1 good steak 🥩
Salt and pepper 🧂
A little oil 🔥
A knob of butter 🧈
1 smashed garlic clove 🧄
A few sprigs of thyme 🌿

Method

Take your steak out of the fridge about 30 minutes early and let it come to room temperature — a cold steak cooks uneven 🥩
Pat it very dry with paper towels, then season both sides generously with salt and pepper right before cooking 🧂
Get a heavy skillet screaming hot over high heat, add a little oil, and lay the steak down away from you — you want a loud sizzle 🔥
Sear about 3–4 minutes per side without moving it, then toss in a knob of butter, a smashed garlic clove and some thyme and spoon that butter over the top 🧈
Pull it off at 130°F for medium-rare, let it rest 5 minutes on a board so the juices settle, then slice against the grain and enjoy ✨
